This vineyard lies just below Aux Vergelesses, wrapping around to the southern face of the hill. The clay-rich soils produce a darker, denser style of wine than Vergelesses. The fruit is like caviar: tiny, compact bunches bursting with colour and flavour. Fermented with 40% whole clusters, the compact bunches make punching down difficult, so the cap is kept moist by gently pouring buckets of juice over it each day during fermentation. Aged in one 3-year-old and one 1-year-old barrel.

Garnet in colour, the nose shows aromas of cherry, blackberry and forest floor. The palate is medium-bodied with layers of dark fruit, savoury complexity and fine, persistent tannins. Still quite reserved in its youth, this wine will reward several years in the cellar.
